Pumpkin Coffee Cake Muffins

Pumpkin coffee cake muffins. Fall came at just the right time this year. Beat with an electric mixer until well combined. This pumpkin coffee cake is perfectly moist and is filled with a thick cinnamon layer and generously topped with cinnamon streusel crumbles!
It’s quite similar to my pumpkin crumb muffins and my streusel pumpkin bread, but scaled up and baked in a 9×13 inch pan to feed those holiday crowds. Soft and moist with plenty of cinnamon crumb topping and sweet spices. Coffee cake is one of my favorite desserts, so i was eager to try my hand at a pumpkin spiced version.
In a medium bowl combine the flour, pecans, sugars, and cinnamon. These cake mix muffins only need 5 minutes to prep, and are ready from start to finish in just half an hour. Since those flavors don't have spices, you may want to add a dash of pumpkin spice to the batter.
These pumpkin coffee cake muffins have a spiced crumb topping that is completely delicious. Variations of banana coffee cake: Use a paper towel to wipe the excess off the sides of the muffin pans.
